Red Velvet Cake with Creme Fraiche Frosting

Yes!!! I do feel guilty eating this cake.
But, I totally deserve it after spending one gut-twisting, vein-popping hour in the gym. That's my excuse and I am sticking to it.......

Red Velvet Cake (taken from Joy of Baking)

250 g flour
1 tsp baking powder
1/2 tsp salt
15 g cocoa powder
113g butter
300 g sugar
2 large eggs
1 tsp vanilla extract
1 cup buttermilk
2 tbsp liquid red food colouring.... do not be afraid by the amount
1 tsp white distilled vinegar
1 tsp baking soda

In a mixing bowl, sift together the flour, baking powder, salt and cocoa powder. Set aside

In a measuring cup, whisk the buttermilk with the red food colouring. Set aside.

Beat butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract.

With the mixer on low speed, alternately add the dry ingredients and buttermilk.

In a small cup, combine vinegar and baking soda. Allow mixture to fizz and quickly fold into the cake batter.

Bake in 175C oven for approximately 35-40 minutes.

Creme Fraiche Frosting

250 ml creme fraiche
250 ml double cream
80 g confectioner's sugar

Process all the ingredients until smooth.
Place the frosting in the refrigerator until it is firm enough to spread.

To assemble:
Cut cake horizontally in half.
Spread the cake layer with frosting. Place the other layer on top of the frosted half.
Frost the top and the sides of the cake.
Garnish the cake with white chocolate shavings.
