Thai influenced dishes have always been the best pick-me-up-er. Methinks it's in the clever balance of sweet-sour-salty in their food that always leaves me in a contented, euphoric state.........mmm.....
Thai-style Chicken Noodle Soup
Rice noodle, boiled and strained
Bean sprout, blanched
cashew nuts, chopped coarsely
Chopped chillies, optional
for the soup
200 g boneless chicken meat, cubed
2 garlic cloves, finely chopped
3 tbsp oyster sauce
1 tbsp fish sauce
sugar and salt, to taste
Simply add all the ingredients into a rapidly boiling water. Simmer for about 15 minutes. Season well.
