Yellow Cupcakes


Yellow Cupcakes

2 cups sugar
6 oz unsalted butter, softened
1 tsp vanilla
4 eggs
1/2 cup warm water
1/2 cup warm milk
2 3/4 cups flour
2 tbsp cornstarch
1 tbsp baking powder
salt

Beat butter and sugar until light and fluffy. Add the eggs one at the time, then add the vanilla, water, milk and mix well.

In a medium bowl, combine flour, cornstarch, baking powder and salt.

Gradually, add the dry ingredients to the wet ingredients and mix well.

Spoon the batter into the muffin cups and bake for 18 to 25 minutes. Let it cool completely before starting to ice the tops of the cupcakes.


Simple Butter Icing

100g butter
200g icing sugar
2 teaspoon of lemon juice or a few drops of vanilla essence
Food colouring

Beat butter with a wooden spoon until it is creamy.
Sift in the icing sugar and stir it in, a little at a time.
Add lemon juice or vanilla essence (if you like) and a few drops of food colouring and mix in.

Add more icing sugar, to make it stiff. For a soft mixture, you may add a little milk.
