Red Snapper with Tomato Yoghurt Sauce

Hmmm............just noticed. I've been having a lot of fish lately.
Red Snapper with Tomato Yoghurt Sauce
5 portions Red Snapper fillet
Pre-heat the grill to its highest setting for at least 10 minutes. While that’s happening, wipe the fish with kitchen paper and lay the fillets in a lightly oiled shallow heatproof dish
Sprinkle a few drops of oil over each fillet and rub it all over, then season with salt, tumeric and pepper, then place the dish under the grill. Time it for 10 minutes each side, then remove the dish
The sauce
1 shallot, minced
1 garlic, minced
1 cup tomato coulis
1/2 cup yoghurt
1 cup frozen peas
1 tbsp fresh thyme
1 large onion
salt and sugar, to season
To make the sauce, heat a little oil in small saucepan. Add shallot and garlic. When its all nice and translucent, add in the coulis. Let it bubbles for a minute.
Add in the rest of the other ingredients and season well.
