Apricot Muhallebi -- Turkish Milk Pudding with Apricot


Apricot Muhallebi

2 cup dried apricot
1 tbsp sugar
1 cup water

Combine the ingredients in a pan and boil until apricot is tender.
Using a blender, process boiled apricot until smooth. Do not add water.

2 tbsp cornflour
2 cups milk
a little salt
1/2 tbsp rosewater

Roasted pistachio or almond for topping

Combine all ingredients in a sauce pan. Simmer in a gentle heat until thickened.
Pour the slightly cooled apricot puree into individual serving dish.
Spoon over the milk custard over the apricot. Refrigerate.
Before serving, sprinkle with pistachio or almond flakes.
