Apam Balik

My daughter wanted pancakes for tea. Quite frankly, I wanted something different from the usual pannekoeken, and I remembered that Mamafami had made Apam Balik many weeks ago, and I can't wait to try it out. So here goes.....

Apam Balik (adapted from Mamafami's recipe)

2 cups flour
1 tsp baking powder
1 tsp bicarbonate soda
1/2 cup sugar
1/2 tsp salt
2 eggs (my eggs were quite small)
1 1/2 cups water
yellow food colouring (my daughter requested for a pink Apam...maybe not)

Add all ingredients in a blender and liquidize to a smooth batter.
Allow to stand for at least 30 minutes.
On a heated griddle or a non-stick pan, dollop a ladle full of batter.
Once the underside have turned a rich golden brown, sprinkled generously with sugar and chopped peanuts.
As for my daughter she had hers with chocolate spread.
I used chunky peanut butter and lichte basterd suiker for the filling.

I'll never buy another Apam Balik again.......this is way better! Thanks Mamafami.
