Chocolate Cupcakes

The kids are having their spring break. One activity that I like to do with my daughter is baking because it does not involve any cutting.....I cannot stand the sight of blood!
With Easter just over, there seems to be a lot of chocolate eggs on sale. I thought it might be fun to include a chocolate egg in the middle of the cupcake.
The cupcake can be made in any flavour, the fun is getting to the gooey mess of melted chocolate in the middle.

Chocolate cupcakes

1 1/2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1/3 cup cocoa powder
1/2 cup oil
1 cup water
1 teaspoon vanilla extract
1 tablespoon vinegar

Mix all ingredients together until moist and well blended. Put in cupcake cups and bake for 20-25 minutes at 180C.
