I'm at wit's end...it's hard when the fridge is full of leftovers, and I'm desperate to clear them. And this is what I come up with my 2 days old lamb roast....
Roast lamb leftover, chopped
1 large onions, finely chopped
1 cup tomato puree
1 can kidney beans
salt and pepper
In a frying pan, cook the steak and onions in a little oil. Stir in remaining ingredients.
Remove from heat after 10 minutes.
Serve with tortilla topped with cheese and egg.
