Hummingbird Cake

Chopped pecan and pineapple
 
 
You will need:

2 cups flour
2 cups sugar
1 tsp. salt
1 tsp. soda
3 eggs, beaten
1 tsp. cinnamon
1 1/2 tsp. vanilla
1 ( 8 oz.) can crushed pineapple-undrained
2 cup chopped pecans
2 cups chopped bananas
1 1/2 cup oil

PREPARATION:
Combine dry ingredients in a large bowl. Combine chopped pecan, pineapple and bananas in a bowl.
Beat sugar and oil until light. Add in eggs, one at a time.
Mix a further 3 minutes until light and fluffy.
Stir in fruit mixture into creamed ingredient. Add in vanilla.
Mix in dry ingredients. Bake at 180° For 1 hour.

Icing for Hummingbird Cake
8 oz. cream cheese 1 box powdered sugar 1 stick butter 1 tsp. vanilla
Mix all together and put on a cool cake
