Making Whoopie

Whoopie Pie
(aka Oreo on Steroid)
For cakes:
2 cups flour
1/2 cup Dutch-process cocoa powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1 cup well-shaken buttermilk
1 teaspoon vanilla
1/2 cup unsalted butter, softened
1 cup packed brown sugar
1 large egg
For filling:
1/2 cup unsalted butter, softened
11/4 cups confectioners sugar
2 cups marshmallow cream
1 teaspoon vanilla
To make cakes:
Preheat oven to 180C.
Whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.
Beat together butter and brown sugar in a large bowl until pale and fluffy. Add egg, beating until combined well.
Alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour, scraping down side of bowl occasionally, and mixing until smooth.
Spoon 1/4-cup mounds of batter about 2 inches apart onto 2 buttered large baking sheets. Bake until tops are puffed and cakes spring back when touched, about 11 to 13 minutes. Transfer with a metal spatula to a rack to cool completely.
To make filling:
Beat together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
Assemble pies:
Spread a rounded tablespoon filling on flat sides of half of cakes and top with remaining cakes.
Song to listen to while stuffing your face with iced cakes and generally feeling sorry for yourself ....my favourite PMS song.....

Gooey ChocFudge with Vanilla IceCream
8 oz butter, melted
1 1/2 cups sugar
2 tsp vanilla extract
4 eggs
1 cup flour
2/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
Heat oven to 170 C.
Grease a square baking pan or individual ramekins.
Stir together butter, sugar and vanilla in bowl.
Add eggs; beat well with spoon.
Stir together flour, cocoa, baking powder and salt; gradually add to
egg mixture, beating until well blended.
Spread batter evenly into prepared pan, or if using ramekins divide equally.
Bake for about 15 to 20 minutes, until a crunchy crust appears with molten gooey chocolate oozes between the cracks.....
Serve it hot with a huge dollop of vanilla ice cream!!

Out and About - de Elfteling

This was our third trip to Efteling......
First was way back in April 1994....minus 20kg ago....when Take That was riding high on UK chart and I was decked out in my finest LA Gear shoes....
It was the good old days, when every girl secretly hoped for a floppy-haired, stuttering English twat in the form of Hugh Grant would sweep them off their feet and walk hand-in-hand into the sunset.....
and as for Mr Dudwey, Hollywood finally produced an anti-chic-flick movie, his ultimate in cinematic experience, what else if it's not Dumb and Dumber, making Jim Carrey the comic genius that he is and me husband a very happy man indeed.....

The little room that could....

Many moons ago, I was tagged by one Madame LeeLin to spill out the content of my fridge.....
Although I have been putting it off, it has been nagging and gnawing me mind all this while.
Let me tell you a bit about my kitchen.....
You see, the dutch has always been known for their frugal nature and this is most obvious in the form of my teeny tiny kitchen....plus the fact that they are never known for their culinary prowess, therefore they see it as a waste of good space to put up what we normally term as a proper size kitchen.
Although my kitchen lacks in size, it makes up in it's streamlined design....I guess size does not matter, after all!!

The all-important after-meal dolci......frozen peas, corn, onions, artichoke and check-out those banana leaves (expensive stuff, that!!).....my homemade satay, frozen. Made specifically for one of those emergency satay-craving moment.

Sticky Chicken Drumstick
Recipe from BBC GoodFood
4 tbsp sweet chilli sauce
1 tsp finely-grated fresh root ginger
2 tsp soy sauce
zest 1 lime
8 chicken drumsticks
Mix together the chilli sauce, ginger, soy sauce and lime zest. Pour over the chicken drumsticks and leave to marinate for as long as you can (put them in the fridge if marinating for any longer than 30 mins).
Place the drumsticks in a shallow baking tray, shaking off any excess marinade. Roast for 20 mins, then pour over the leftover marinade and cook for 5 mins more until sticky and browned.
Hot and Sour Cucumber Salad
1 cucumber
4 tomatoes
2 shallots , finely sliced
2 bird's-eye chillies , split open
salt and sugar
rice wine or cider vinegar
handful coriander leaves
Finely slice the cucumber and halve the tomatoes. Toss these with the shallots and chillies, season and dress with vinegar. Scatter coriander over.
Now, for something totally irrelevant to the above recipes......

Mica ~ Hi, ya!! My husband works in an AngloDutch Company and memang betul, cost of living is quite high and kalau tak ada sponsor and very careful with our expenditure, memang senget-bengetlah budget bulanan. Syukur, everything is well taken care off....
